ASST. SECURITY MANAGER
To provide the highest quality of food with the maximization of profit while ensuring all healthy regulations are respected. To ensure the establishment and continuity of training program for all kitchen staff Assist Executive Chef to achieve the Objectives & Kitchen Management responsibilities
Requirement:
- Minimum 2 year experience in similar position, preferably in an international chain hotel
- Minimum Hospitality Academy Graduates
- Computer Literate (windows, word, excel, outlook), familiar with Hotel Information System
- Have good analytical skill
- Must have refined skills in public relation
- Good administration skill and has asset management control skill
- Will be expert in food & beverage promotion as per trend
- Indonesian, European and Chinese (special Dim Sum) cuisine skills
- Have good knowledge of food & beverage product
- Have full knowledge of in health and safety regulations and be able to adapt to emergency situations as well as making sure you attend to guest needs
- Have full knowledge of HACCP
- Has ability to maintaining up-dated and accurate costing of all dishes prepared and sold in the Food and Beverage operation
- Has ability to determining the minimum and maximum stocks of all food, material and equipment
- Has ability to manage handle big function and event
- Has ability to Control Food Cost
- Has ability to create new menus and seasonal food concepts including setting the standards for recipes, portion control and costing
- Has ability to monitor the quality, quantity of food items and mise-en-place to be produced, bought or prepared for the day to minimise wastage, achieve profitability and productivity
- Have ability to communicate with all levels of personnel and guest
- Able to manage expenses within budget constraints to enhance profitability
- Financial management experience required, e.g. ability to analyze P&L statements, develop operating budgets and forecasting.
- Has capability in training/facilitating people
- Posses strong leadership with quality of developing people
- Good listener

- Well organized and able to work with team
